Hello! I am back with a little post about my current skincare routine! I'll be 25 this year! That age sounds a little scary to me...like I am half way done with my 20's and closer to my 30's!... I know I am still "young", but I feel like I should start taking care of myself more. One thing being, MY SKIN.
I've been wanting to make my own pizza dough from scratch at home, and I wanted to do a "healthyish" version using whole wheat flour! This was SO easy, delicious, and budget friendly!... It cost me about $10 to make since I already had some of the ingredients on hand. I have the receipts to prove it lol. Read on to see how I made it!...
I love to make breakfast bars instead of buying the sugar-filled store bought ones! I always look at the sugar amount in bars & get shocked to see how much is in a breakfast bar! A LOT! So I like to make my own, because it's healthier, cheaper & EASY! I've made non-bake breakfast bars, I wrote a post on it too! This time I made baked breakfast bars! Which came out delicious! Here's how to make them...
This week for our lunch meal prep I made us burrito bowls! Inspired by one of our favorite restaruants, Chipotle! CUE SONG *Im in loooove with Chipotle!* lol 😜 keep reading to see what you will need to make these delicious bowls! You know that time of the day say around 3pm or 4pm?...you're getting kinda low on energy & a little hungry but dinner is still a whiles away?.. Well this is the perfect snack to pick you back up & help you keep going! It's also a nice sweet treat but you don't have to feel guilty because this is PACKED with yummy, good for you stuff! Like ground flax & chia seeds which have great fiber! Almonds & walnuts to give it a nice crunch! Raw cacao powder for a nice chocolate taste! & the main attraction yummy sweet gooey medjool dates, which help stick everything together & also contains 50% more potassium than bananas! :) so as you can see!.. Lots of yummy-good for you things & more! Read on to see what all you need & how to make these energy bites! I felt like baking since me & the hubby haven't been feeling too well & had a few things in hand already! So this is the perfect pick me up & sweet tooth craving kind of recipe! It's a little healthier since I used raw cacao powder & whole wheat flour. No eggs or milk required :) here is what you will need... This is per individual. •Whole Wheat or Regular Flour (2 TBSP) •Cacao Powder (2 TBSP) •2 TBSP of Sugar •1 tspn of Olive or Canola Oil •A Pinch of Salt •Vanilla Extract •2 or 3 TBSP of Water Mix all your dry ingredients first & then your wet ingredients. Mix well. Add more water if batter is too thick. Microwave for 1 minute & it should perfect. I added chocolate chips as well:) a scoop of vanilla ice cream on top would have been really nice too, but we had it a cup of milk :) It was very YUMMYY! Enjoy! Hope you guys can try this! :) XOXO-Mrs. Beltran So a couple weeks ago I made chicken Parmesan and a Zuchinni mushroom pasta :) I always like to buy a little more to have left overs or to make a whole new meal. I had lots of left over Zuchinni, mushroom, pasta, sauce & some chicken breast my husband had made for another dish. So I got creative & made a whole new dish!... I sautéed the cut up veggies in some garlic & olive oil. Threw in the chicken I cut up as well :) I then threw in the pasta to soften it up & break it up since pasta tends to stick. I then heated up the left over sauce & mixed it all up :) There you have it! An easy, filling meal for dinner or whenever :) topped it with some Parmesan & it was delicious! Always remember to look at what you already have in the fridge (that is still fresh of course lol) & get creative & make new dishes! There are no rules in my kitchen! Just have fun & make good food your way! XOXO-Mrs. Beltran Hello guys! :) I have a new recipe for you guys! This is one of my favorite things to make. Before I got married, I used to cook for my family every Monday to practice cooking, try recipes, and get a feel how it is to cook for my family on a regular basis! ;) & they would request it all the time too! I did a healthier version of the chicken Parmesan & added a nice fresh, easy pasta on the side. I made this for our meal prep of the week:) YOU WILL NEED: •Boneless, Skinless Chicken Breast (2 lbs if you want left overs) •Linguini Pasta •Diced Tomato (4 cans) •Zuchinni •Onion •Parmesan (sliced & grated) •Mushrooms •Olive Oil •Flour •Italian seasonings •Minced Garlic •Red Pepper Flakes (for a spicy sauce, which I love & makes my sauce a little different) •Salt & Pepper First preheat your oven to 450 degrees. Then put a pot of water & a little salt to boil & add whatever pasta you like:) I made linguini pasta. You first start with the sauce. Add about a spoon of minced garlic, sliced onion & Sautee that for a good 5 mins. Then add your canned diced tomato & it's juices. Add Italian seasonings, salt & pepper. If you want to make it a little spicy then add the crushed red pepper flakes:) however much you can take😉 Stir your sauce & leave to simmer for about 15 minutes. Put in a bowl, clean out bowl & then start on your chicken. Cut your chicken breast into thin cutlets like you can sorta see in the picture. Get a plate with flour & lightly coat them. Make sure to pat your chicken cuts first. Add olive oil to the same sauce pan you used. Make sure it's wiped clean. Once the oil is hot cook each side of the chicken for 5 minutes or until it gets a little brown. Set aside. You then want to sautée more minced add garlic, mushroom & Zuchinni until soft. Add salt & pepper to taste. Then you add your pasta, a bit of water & the grated Parmesan. Stir until it thickens & gets nice & creamy 😊 You then want to add browned chicken to a baking pan. Top with the sauce & sliced Parmesan. Bake until cheese melts & gets a little brown but make sure not to over bake or the bottom will start to burn. Here is the completed meal :) it was delicious! It's out lunches for the week, so that's why it's in a glass container. Here is our served portions for the week!:) I love making food I'm excited to eat but know that I chose a healthier way to make them 😊 hope you guys try this out! Enjoy! XOXO-Mrs.Beltran P.S.
